Bread pakoda (Deep fried Bread fritters)




Bread slices smeared with mint chutney (Click for recipe) (paste) , dipped in a batter of gram flour and spices. Deep fried to a golden brown colour. A quick and easy snack to prepare from ingredients easily available in the kitchen . Loved by kids and adults alike. Great as a starter or appetiser for your parties. Perfect with a cup of Hot tea for the rainy season .

INGREDIENTS :

Bread slices 6 to 8 (Better if they are a day or two old. Its easier to make the pakoras)
Mint Chutney (Click here for recipe)
Oil for deep frying 

FOR THE BATTER : 

Besan or gramflour 1 Bowl
rice flour  1/2 bowl (Makes the pakoras crisp)
Pinch of hing powder or asafoetida
turmeric powder 1/2 teaspoon
ajwain seeds 1/2 tsp (I always add ajwain in any dish with gram flour as it makes it easy to digest)
Red chilli powder 2 tsp (Adjust as per taste)
Pinch of baking soda to make the fritters light and crispy.
Salt to taste 
Little water.

METHOD :

1. Cut the edges of the bread slices and keep aside.
2. Apply the mint paste or mint chutney to each of the slice.
3. Adding little water at a time, make a thick batter using all the ingredients for the batter.
4. Mix well so as to avoid any lumps . Let it rest for 5 to 10 mins. Mix again.
5. Take 2 bread slices at a time and place them over one another with the mint paste side inwards so as to make a sandwich. 
6. Cut this into 4 parts so its easy to dip in batter and fry.
7. Heal Oil for deep frying in a kadai/wok.
8.. Take each small piece of sandwich, dip it in the batter and gently slide into the oil for frying .
9. Fry on both sides till nice and golden brown.
10. Drain on an absorbent paper.
11. Serve hot with Green chutney or Ketchup of your choice .
