Vegetable Frankie



Frankie is a popular street food . Basically its a roti or a flatbread rolled with filling of your choice. Made tasty and tangy with addition of few spices like the 'Chat masala' and the Mint chutney. (Click here for recipe). Made both using veggies as well as meat of your choice, it forms a complete one dish meal packed with nutrients.. 

MISCELLANEOUS INGREDIENTS "

Finely chopped or thinly sliced onions
chaat masala
Mint chutney (Click here for recipe)

For the Covering :

INGREDIENTS :

2 Cups Wheat flour
1/2 tsp salt
Oil 1 Tbsp
Water as needed 

METHOD :

1. Mix all the above ingredients and make a soft dough as you would make for rotis or chapatis. Keep aside covered for 15 to 20 mins.

For the Filling :

INGREDIENTS :

4 MED potatoes boiled n mashed
1 beetroot grated
1 big carrot grated.
1/2 bowl green peas shelled.
5 green chillies
2 tsp ginger garlic paste
1 Tbsp chopped coriander.
Salt to taste
Oil
Semolina for coating the cutlets.

METHOD to make cutlets for stuffing :
Boil n mash potatoes.
Steam the grated beetroot n carrot in microwave for 5 to 6 mins without adding any water.
Boil n mash slightly the green peas.
Mix all of these.
Add paste of ginger garlic chillies n coriander to this.
Add salt to taste.
Make cutlets of elongated or sausage like shape.
Roll in semolina or rawa .
Shallow fry in a pan.
Drain on absorbent paper and Keep aside.

ASSEMBLING THE FRANKIE :

1. Take small balls from the dough and roll out rotis or flat breads. 

2. Roast them on a skillet or tawa adding little ghee or butter from the sides.

3. On each roti place the veggies cutlet roll

4. Add a teaspoon of Green mint chutney all over the roll.

5. Now add some finely chopped or sliced onion over it.

6. Generously sprinkle 'Chat masala' over this.

7. Roll the 'Frankie' and seal using a toothpick .

8. Serve Hot.
