'Malvani Masala' a speciality of the 'Malvan' region in Konkan , Maharashtra. Prawns are a huge favourite at home. I dished out this almost instant recipe , my own creation. Very few spices required and a simple marination . Ready in a jiffy this can be served as an accompaniment with Rotis, Steamed rice, Bhakari or Phulkas (Indian flatbreads)
INGREDIENTS :
Medium sized Prawns (Shrimps) 15 to 20 nos
Ginger garlic paste 2 tsp
Turmeric powder 1 tsp
Kokam agal 2 Tbsp
Malvani Masala (I use the one readily available in the market) 3 tsp (Adjust as per taste)
Salt to taste
Oil 2 Tbsp
Onions 1 Med sized
Tomato 1 Med sized
Chopped coriander leaves for garnishing.
METHOD :
1. Clean, de-vein and de-shell the prawns and keep aside.
2. Marinate the prawns using ginger garlic paste, turmeric powder , Kokum Agal (Extract of the Kokum fruit) , malvani masala and a pinch of salt.
3. Keep aside for 20 to 30 mins .
4. Chop the onions and tomatoes and grind them to a fine paste , adding very little water.
5. Heat Oil in a Wok (Kadhai) .
6. Add the Onion-tomato paste and stir fry till it changes to a copper-pink colour.
7. Add the Marinated prawns and mix well.
8. Add little water if required and keep covered with low flame .
9. Keep stirring occasionally.
10. In about 8 to 10 mins , the prawns will be cooked. Add salt (to taste)in the end and bring to a boil.
11. Garnish with chopped coriander leaves and Serve Hot with Rotis, Bhakari , steamed rice or Phulkas .
