Burmese Khow suey

                                             


In Burmese cuisine, Khow Suey, is a noodle dish that comes from the mountainous Shan State. It is a one-dish soup meal made of egg noodles and curried beef/Veggies or chicken with coconut milk, served with a variety of contrasting condiments. A squeeze of lemon also adds tanginess to Khow Suey. The dish is similar to the Burmese noodle dish 'ohn no khauk swe', which literally means  "coconut milk noodles."
The dish originated in Burma, and came to East India with Indians who migrated from Burma during World War II. Although it takes a little effort to prepare this dish , it isn't that difficult either . All it takes is a little planning and advance preparation . The condiments are very varied in nature and a mix and match of these makes the dish very tasty and flavourful. 

INGREDIENTS :

Egg/Veg noodles 1 pkt
Coconut milk 200 ml 
Chicken Boiled and shredded 250 gms (You can replace it with beef or fish or veggies of your choice)
Thai curry paste (Red or green ) as per choice I used the store bought ones. 
Oil 2 to 3 Tbsp
Salt to taste 

CONDIMENTS :

Chillies finely chopped
few pcs of lemon
Spring onion greens a fistful finely chopped
Salted peanuts 1/2 bowl
Onion 1 large Thinly sliced and fried to a golden brown 
Garlic 5 to 8 pods  roughly chopped and fried till golden brown.

METHOD :

1. Boil the noodles in sufficient amount of water . Add a tsp of salt and a tsp of Oil while boiling.
2. Once boiled , drain the water from the noodles using a colander .
3. Hold the noodles under cold running tap water till all the starch is gone. 
4. Spread the noodles on a plate and keep aside..So they won't stick to one another.

                           

MAKING THE CURRY :

1. In a pan/wok, heat 1 Tbsp of Oil.
2. Add around a Tbsp of the Thai curry paste and stir well.
3. Now add the coconut milk .
4. Add the boiled and shredded chicken/ Chopped and blanched veggies.
5. Add salt to taste and bring it to a boil.

SERVING :

1. In a Bowl take some boiled noodles.
2. Top them with the curry/soup in coconut milk.
3. Add with condiments of your choice.
4. Consume while it is still Hot. 
5. Enjoy !!!
