Samosas (Popular street food)


Crispy , spicy and popular Indian snack , Outer covering of Wheat flour or Refined flour (Maida) with a filling inside. Most commonly the filling  is a mixture of boiled and mashed potatoes, green peas and few spices .Deep fried or baked to a deep rich golden brown colour. One can also use minced meat , chicken or fish fillets as a filling. Tastes great when deep fried but the health concious folks can also bake these or Air fry them. Enjoyed best with a Hot cup of ginger tea !!!


INGREDIENTS :

FOR THE FILLING 

4 Medium sized potatoes boiled, peeled and mashed.
6 to 8 green chillies 
1 bowl green peas (Boiled separately) 
2 inches ginger 
8 to 10 cloves garlic 
Handful of chopped coriander
Dhana-jeera powder (Coiander and cumin powder) 1 tsp
Aamchoor Powder (Optional) 1 tsp
Salt to taste.

METHOD :

1. Grind together the ginger, garlic, chillies and coriander in a mixer without adding any water at all.
2. Add this and the salt to the mashed potato .
3. Add to this the Boiled green peas.
4. Add the Aamchoor powder and Coriander cumin powder and mix well.
5. Your Filing is ready.


                            

MAKING THE SAMOSAS.

(I have used the readymade or store-bought samosa-pattis) 

1. Take one samosa patti.
2. In the lower corner place around 1 tsp of filling .
3. Turn the patti (Folding it repeatedly to form a triangle)
4. Seal the edge with a thick paste of wheat flour and water.



5. Assemble all such samosas and keep aside (Keep covered with a damp cloth to avoid drying and cracking of the outer cover ) 
6. These can be prepared before hand and fried at a later time too. (Great idea for parties)
7. In a wok or kadhai , heat sufficient oil for deep frying .
8. Once the oil is hot, deep fry the samosas one by one till deep golden brown and crispy on the outside.
9. Serve hot with Tomato ketchup or Mint Chutney (Click for recipe)
