Amboli : Thin and crisp pancakes made from a mix of rice flour and gram flour with a few added spices, is more popular in the coastal or konkan belt of Maharashtra region. Simply because of the easy availability of rice there. Rice flour being the primary ingredient of this recipe .
Yet another preparation that can be prepared with ingredients readily available in your kitchen pantry. Healthy, tasty and easy to digest. Some people also prepare a sweet or bland variation of this. However we prefer the spicy one. Hope you all like it too.
INGREDIENTS :
Rice flour 1 and 1/2 bowl
gram flour (besan) 1/2 bowl
ginger around 2 inches
green chillies 4 to 6 (Adjust as per your taste)
coriander leaves 1 fistful
cumin seeds 1 tsp
water
Oil for the pancakes.
Salt to taste
METHOD :
1. In a bowl take the rice flour and the gram flour.
2. Add the cumin seeds and the salt to taste and mix well.
3. Make a paste of ginger, green chillies and coriander leaves.
4. Add this to the above mixture.
5. Mix well.
6. Add water gradually, mixing all the while .
7. Avoid any lumps to be formed. Break if any lumps are formed.
8. Add water to make a batter of pouring consistency. So as to make thin pancakes.
9. Heat a tawa or iron girdle or nonstick pan for making the pancakes or Ambolis.
10. These taste best when made on an Iron girdle or ' Bidaacha tawa' as it is called in Marathi.
11. When tawa is hot , add a few drops of oil and spread the batter to make a thin pancake
12. Ad a few drops of oil at the edges.
13. Flip the Amboli/ Pancake when edges turn brown .
14. Cook on both sides till nice and crispy.
15. Your Amboli is ready . Serve hot with Peanut chutney or green coconut chutney.
*** Sometimes if the pancakes are breaking and not coming out as a whole round try adding a little more gram flour to the mixture.
