Wafer thin slices of potato , pan fried in little oil with just few ingredients. This is one of the most basic of preparations using the versatile potato. 'Kachrya/Chaktya in Marathi means thin slices and 'batata' means potato. Hence the name . Great for beginners in cooking. All ingredients used are available in the kitchen. Goes well with almost anything. I have yet to come across a person who does not like this humble yet tasty preparation.
INGREDIENTS :
4 Medium sized potatoes
Oil 2 to 4 tsp
mustard seeds 1/2 tsp
hing powder 1/2 tsp
turmeric powder 1/2 tsp
red chilli powder 1 tsp (Adjust as per taste)
Salt to taste.
METHOD :
1. Wash the potatoes and cut them in halves lengthwise.
2. Now make wafer thin slices of these halves.
3. I personally do not peel the potatoes but you can peel if you want.
4. wash these slices and spread on a towel to dry.
5. Keep it like this for an hour or so. (This makes the slices very crisp)
6. In a kadai, heat some oil.
7. When Oil is hot , make a tadka or phodani . Add mustard seeds. When the seeds crackle add the hing powder and turmeric powder.
8. Stir a little
9. Now add the potato slices and mix well.
10. Cook on medium flame and uncovered.
11. Stir occasionally but not frequently. (Else the slices will break and not turn crispy)
12. Once the slices turn crisp and golden brown and are cooked, add the red chilli powder and salt and mix once.
13. Heat for some more time.
14. Your batata kaachryaa are ready. Serve hot with roti/ Poli/ Chapati or even steamed rice.
