Spicy Coriander fritters (Kothimbir Vadi)





Coriander and gram flour mix lightly spiced, steamed and then pan fried to a nice golden brown colour. Can be had even without pan frying. Tastes equally better. 
Coriander being one of the most easily available and versatile of herbs. Indian cooking cannot be imagined without coriander. 

INGREDIENTS :

2 Big bunches of coriander
Gram flour / Besan 1/2 Bowl (Adjust as required)
Rice flour for crispiness 1/4 bowl 
Red chilli powder 2-3 Tsp
Salt to taste 
oil 1/2 tsp 
turmeric powder 1/2 tsp
Hing powder 1/2 tsp
ginger garlic paste  1 tsp
water

METHOD :

1. Clean and wash thoroughly and finely chop the coriander .
2. Keep side in a bowl.
3. To this add the red chilli powder and salt (Adjust both according to your taste)

                                 


4. Keep aside for 30 mins.
5. The water from the coriander leaves will be released due to the salt .
6. Keep adding Gram flour to this mix slowly. 
7. Add the Rice flour and ginger garlic paste to this.
8. Stir continuously to avoid any lumps
9. Add as much Besan (Gram flour) so as to make a batter of pouring consistency . Keep aside. 
10. In a square or round container, apply oil on all sides.
11. Pour the mixture in this.
12. Steam this in a pressure cooker without whistle for around 30 mins .
13. Check with a knife or toothpick, Insert it in the steamed mix, if it comes out clean then it is ready and completely steamed.


              

14. Cool completely.
15. Cut into square pieces of desired size.
16. The Diet conscious people can eat them just after steaming without frying

17. Heat the oil in a pan, and pan fry the steamed fritters in this till golden brown on all sides.
18. Crispy coriander fritters are ready . Serve Hot with Garlic chutney, ketchup or as it is.
