Pav- Bhajee (Spicy Mashed vegetables with buttered bread)




Select vegetables boiled and mashed.Cooked with spices and butter served along with buttered and toasted bread . This is typical street food in India . Very easy to prepare and is a one dish meal for people 'On-the-go'. Relished by kids and adults alike for its spicy yet tangy taste  Always a hit with kids birthday parties as it can be prepared in advance. Here is a simple recipe for the same . Hope you all enjoy it .

INGREDIENTS :

FOR THE BHAJEE (MASHED VEGETABLES)

Potatoes 4 Medium sized
Cauliflower florets 1 bowl
capsicum chopped finely 1/2 bowl 
Green peas 1/2 bowl
French beans 1/2 Bowl 
Tomatoes 3 medium sized finely chopped
Onions 3 Finely chopped + 1 for garnishing/ accompaniment
Pav bhajee Masala (Readymade spice mix easily available in the market)  4 Tbsp
Ginger garlic paste 1 tsp 
Red chilli powder 1 tsp
Salt to taste 
Butter (Salted) 200 gms 

Bread buns (Laadi pav) 
Chopped coriander leaves for garnishing.

METHOD:

1. Finely chop all the vegetables .Cook them in the pressure cooker(Adding very little water ) till well done .
2. Cook the onions and tomatoes in a seperate vessel in the pressure cooker.
3.With the help of a masher, mash all the vegetables to form a thick paste like texture.Leave aside.
4..Once cooled, make a paste of the cooked onions and tomatoes and keep it aside.
5. In a wok, heat around 2 Tbsp of salted butter .
6. To this add the onion, tomato paste. Stir well.
7. Add the ginger garlic paste and stir well.
8. Once the paste changes colour, add the mashed vegetables and mix well.
9 Now add the chilli powder, 'Pav bhajee masala' and salt to taste (Increase or decrease individual quantities to suit your palate)
10. Once it comes to boil add some more butter on top . Keep covered .
11. Spicy tangy Pav bhajee is ready to be served.
Garnish with finely chopped coriander leaves .

SERVING :

1. Cut each pav or bread horizontally. Apply butter liberally on both the sides. 
2. Heat on a tawa or gridle till nice and brown.
3. Serve HOT with the bhajee, sliced onions and a wedge of lemon .
4. Enjoy !!!!
