Fast to cook and good to eat. This dish is simple to prepare with very few ingredients that are readily available in the kitchen. Packed with proteins and full of energy. Simple scrambled eggs, lightly tempered with Indian spices. This forms a power packed breakfast when eaten with bread. Can also be served with hot rotis or phulkas .
INGREDIENTS :
Eggs 4 nos
Onions 1 Medium sized (Finely chopped)
Tomato 1 small (Finely chopped)
Oil for the tadka/tempering
Mustard seeds 1/2tsp
Hing powder (asafoetida) 1/2 tsp
Turmeric powder 1/4 tsp
red chilli powder 1/2 tsp
Green chillies 2 nos (Finely chopped)
Milk 1 Tbsp
Coriander leaves 2 Tbsp (Finely chopped)
METHOD :
1. Beat the eggs lightly . Add salt and milk to eggs and whisk. Keep aside .
2. In a wok , heat the oil.
3. When oil is hot add mustard seeds. When the seeds crackle, add hing powder, turmeric powder and stir for a while.
4. Add the chopped chillies, onions and stir for a min or two.
5. Once the onions are translucent, add the tomatoes.Stir again for some time till tomatoes are cooked .
6. Now add the egg, salt , milk mixture, Add the chilli powder. Add the chopped coriander leaves and stir quickly and continously for a minute or so.
7. Turn off heat . Bhurjee is ready. Garnish with coriander and Serve hot with Bread or roti/Phulka etc .
