Corn (Bhajiyas) Pakoras




Absolutely delicious and mouthwatering , deep fried to a perfect golden brown colour, mildly spiced sweet corn fritters or corn pakoras is a popular street food enjoyed best with mint chutney or tomato ketchup. An absolute must-have during the monsoons. Here is a simple recipe which I am sure you will enjoy. 

INGREDIENTS :

1 bowl sweet corn kernels
1 small onion chopped finely.
1/2 bowl besan
1Tbsp riceflour
Salt to taste 
Red chilli powder to taste
Ajwain 1 pinch
Baking soda 1 pinch (To make it crisp)
Chopped coriander 1 tbsp
Hing(asafoetida) 1/4 tsp
Haldi 1/4 tsp
Chat masala 1/2 tsp.(Optional)
oil for deep frying.

METHOD :

1. Boil corn kernels in salt water till cooked. Drain n keep aside.
2. Coarsely grind these kernels.
3. Mix all the ingredients except oil n chat masala. 
4. Make a thick paste (Adding little water as required) such that you can make 'pakoras'.
5. Heat oil in a kadai.
6. Deep fry pakoras till golden brown
7. Drain excess oil on absorbent paper.
8. Sprinkle little chat masala n serve hot with Mint Chutney (Click for recipe) or ketchup of your choice.
