Crispy fried Potato fritters



Monsoons or rainy season bring along with it an ir-resistable craving for 'pakoras/bhajiyas' or deep fried fritters . Indians cannot imagine monsoons without having a plateful of these. 
Thin slices of potatoes, dipped in a batter made from gram flour (Besan) and a few spices. Deep fried to a perfect golden brown colour. This one is an easy to prepare snack. Can be easily prepared with readily available ingredients in the kitchen . Enjoyed hot with tomato ketchup or green chutney.

INGREDIENTS:

4 Medium sized potatoes
gram flour  1 bowl
rice flour (For crispiness) 1 Tbsp.
Red chilli powder   2 tsp or adjust as per taste.
Baking soda a pinch (To make fritters light and fluffy)
Asafoetida (Hing) 1 pinch 
Turmeric powder 1/2 tsp.
Ajwain seeds 1/4 tsp
salt to taste .
Oil for deep frying 

METHOD :

1. Clean, peel and wash the potatoes.
2. Cut into 2-3 mm thick discs and keep in a bowl of water to prevent them from turning dark.
3. In a mixing bowl, mix gram flour, rice flour, red chilli powder, baking soda, asafoetida, turmeric powder, ajwain seeds and salt to taste.
4. Add water slowly while mixing , so as to form a thick batter.
5. Mix well to avoid any lumps being formed.
6. In a thick bottom Wok, heat sufficient oil for deep frying the fritters.
7. Once the oil is Hot, dip each of the potato discs in the batter and deep fry in the oil.
8. Deep fry till golden brown on both sides.
9. Drain on absorbent paper.
10. Serve hot with tomato ketchup , green mint chutney or dry Garlic chutney (Click to find recipe)
