Vegetable lollipops




A potato and veggie mixture, shaped like lollipops. Deep fried to a perfect golden brown colour. Veggies and cottage cheese make this one absolutely healthy and a sure-shot way to ensure the kids enjoy eating veggies.  A great appetizer for you parties. Will be loved by parents and children alike. 

INGREDIENTS:

For the potato-veggies mixture :

Potatoes : 4 Medium sized
Paneer/Cottage cheese 100 gms
French beans finely chopped 1/2 bowl
carrots grated 1/2 bowl
Green capsicum finely chopped 1/4 bowl 
cabbage finely shreeded 1/2 bowl .

** I've used these veggies but you can alter the veggies as per your liking .

Cornflour (for binding) 2 Tbsp
Ginger and green chilli paste 1 Tbsp
Schezwan masala  2 -3 tsp (It is readily available in market. You can skip this if not available)
Salt to taste 

For the lollipop sticks :

Bread sticks 
Cornflour paste(1/2 bowl water and 1 Tbsp. cornflour)
bread crumbs
Oil for frying .

METHOD :

In a bowl mix all the ingredients for the lollipops. Mix well.
Take the bread sticks and break them in 4 to 5 inch long pieces.
Make a small ball of the potato veggies mixture and mount it around the bread stick. Press well so it stays firmly on the bread stick.
Dip this lollipop into the cornflour paste and immediately roll in breadcrumbs.
Keep aside covered in a plate.
Similarly repeat for all the remaining mixture.
In a wok or Kadai, heat sufficient oil. Once the Oil is hot, Deep fry the lollipops one by one till nice and golden brown on all sides
Drain on absorbent paper.
Serve hot with tomato ketchup or schezwan sauce.
