A typical Indian meal is a very balanced meal consisting a variety of preparations keeping in account the nutritional needs. The koshimbir or salad is one such preparation, predominant in Maharashtrian cooking . Usually prepared with raw vegetables thereby retaining all the nutrients. Very easy to prepare actually can be a good beginner's recipe for your kids.
INGREDIENTS :
Grated carrots 2
Shengdana kut (roasted and crushed peanuts) 1 Tbsp
Sugar 1 tsp
Chilli powder 1 tsp
Chopped coriander 1 Tbsp
Salt to taste
Juice of half lemon .
FOR TADKA/PHODANI:
Oil 2 tsp
Jeera half tsp
Pinch of hing.
METHOD :
In a bowl mix all ingredients other than for phodani. In a small kadai make 'phodani' of Oil,hing and jeera. Pour over carrot mixture n mix well.
Carrot koshimbir ready in a jiffy . Enjoy !!!
