Sweet corn is one of the most versatile ingredients . Loved by one and all, can be used in a variety of preparations. Corn pakoras or corn bhajiyas are pretty commonly made in Indian homes on a rainy day. I thought of adding my own twist to it and the result was these absolutely light, melt-in-the mouth. Corn fritters . Steamed and then shallow fried to a golden brown. The health-concious can have them simply steamed which also taste equally good. Everyone at home loved this novelty . INGREDIENTS :
Sweet corn kernels boiled and crushed 1 Bowl
Ginger 1 inch piece
4 green chillies
bunch of coriander leaves.
Besan / chickpea flour / gram flour 1 Bowl
Rice flour 1 Tbsp (This gives it the crispiness)
Asafoetida half a tsp
turmeric half a tsp.
Red chilli powder 1 to 2 tsp
salt to taste .
METHOD :
1. Boil the sweet corn kernels . Crush them in a mixer and keep aside .
2. grind the ginger , chillies and coriander to a fine paste.
3. in a bowl mix the crushed corn, ginger chilli paste
4. Add the besan and rice flour.
5. Add the remaining ingredients and mix well.
6. Slowly add water as you keep stirring to avoid any lumps.
7. Add water till you get a thick but pouring consistency.
8. Grease a plate with some oil and pour this mixure into it.
9. Steam in a pressure cooker without whistle or in a steamer for 20 to 25 mins .
10.Remove and let it cool.
11.Cut into piecess of desired shapes.
12. You can either eat them steamed or shallow fry in a pan till golden brown on both the sides .
13. Serve hot . Enjoy with tomato ketchup , green mint chutney or As IT IS.
