Kutchi Dabeli


Simple Pav or bread buns (ladi pav) stuffed with the most delicious sweet, sour, tangy, tasty potato mixture topped with pomogranate kernels, spicy peanuts and shev. This popular street food that has its origin in the 'Kutch ' region in the state of of Gujrat in India,(Hence the name Kutchi Dabeli) is sure to awaken your taste buds . I bet you cannot stop at having only one !!!


INGREDIENTS -

FOR STUFFING:

                               


Potatoes 4 medium sized boiled n mashed
Dabeli masala - Readily available in market.
Juice of half a lemon
Salt to taste , sugar 1/2 tsp.
Bread buns 6 to 8 nos
Butter 50 gms 
Sweet imli chutney - tamarind jaggery n dates paste 
Red chilli n garlic paste or lal mirchi thecha .
Thin sev 200 gms
Chopped onions 2 medium sized
Pomegranate 1 
Spicy peanuts/ Tikhat shengdana 200 gms approx 

METHOD :

TO MAKE STUFFING :

1. Heat 2 tbsp of oil on a pan . When hot add around 2 tbsp of Dabeli masala n fry it for a minute. To this add the mashed potatoes. Add lemon juice, Salt to taste, sugar and mix well. The stuffing is ready. Keep aside. 

2. Take the 'pav' or the bread bun and cut it horizontally in two pcs. On the outside apply a little butter n heat till lightly brown . 

3. On the inside of one half apply sweet tamarind chutney. On the inside of other half apply red chilli garlic paste . 

4. On this place a Tbsp of potato stuffing. Over this add a little bit of chopped onion , few pomegranate beads, spicy peanuts and the thin shev. Place the other half of the pav/bun over this n press lightly.

5. Spicy, tangy and absolutely mouth watering 'Dabeli' is ready.
