Chicken Fajitas

  3. Fajita is a dish of Mexican origin consisting of strips of spiced meat, chopped vegetables, and grated cheese, wrapped in a soft tortilla and often served with sour cream. One can substitute the meat with Tofu, Paneer or other veggies of your choice. Very easy to prepare with a little bit of planning and preparation. This is a one dish meal and full of health and nutrition. I have slightly twisted the recipe to suit the Indian palate.. 

    FOR THE STUFFING :

    Tender pcs of Boneless chicken breast 250 gms
    Curds/ Plain yogurt 2 Tbsp
    Red Chilli powder 1 tsp
    Ginger garlic paste     2 tsp
    Mexican seasoning (Available in market) 2 Tbsp or as per taste
    Mint Chutney (Paste of green chillies+coriander+mint leaves)     2 tsp.
    Coriander+Cummin seed (Dhania- Jeera) powder 1 tsp
    Salt to taste .
   
    Additional veggies :

    Ice berg lettuce
    Coloured Bell peppers Finely chopped 2 nos     
    Grated cheese (Optional) 

   Readymade Tortilla sheets (Easily available in the market)
   2 tsp butter 
   Salsa sauce 

    METHOD :

    1. Cut the boneless chicken into 1 inch pieces, Clean wash and keep aside in a bowl.
    2. Add all the other ingredients and mix well.
    3. Keep covered in the refrigerator for at least 30 mins.
    4. Heat a Non stick pan. Once the pan is hot, add this marinated chicken pieces and      stir fry in medium flame till nice and golden on all sides. (No need to add Oil )
    5. Add just a little water if you feel the mixture is becoming too dry. 

ASSEMBLING THE FAJITAS:

1. On a girdle add a little butter and roast the tortilla sheets till brown on both sides.
2. Spread the sheet on a plate, add some iceberg lettuce.
3. Add the chicken stuffing on it.
4. Now add the chopped Bell peppers and a tsp of salsa sauce.
5. Add some grated cheese if you prefer .
6. Roll the Fajitas into a roll. Fix the rolls with a toothpick . 
7. Serve on a bed of Iceberg lettuce with Salsa sauce or sour cream. 
8. Enjoy !!!
