Aloo-Paneer Parathas (Stuffed Indian Flatbread)


Indian flatbread stuffed with a spicy mixture of potatoes and cottage cheese. Served HOT with a dollop of butter with some yogurt and pickle form an absolutely delectable One-Dish meal. Can be a great kick-start to a busy day if you have this for breakfast . Can even be had as a meal. 

FOR THE COVERING :

INGREDIENTS :

1. Wheat flour 1 Cup
2. 1/2 tsp salt 
3. 1 tsp Oil
4. Water for kneading the dough.

METHOD :

1. Take all the above ingredient except water and mix lightly .
2. Gradually add water to knead into a soft dough.
3. Keep the dough covered for around 15 to 20 mins .

FOR THE STUFFING :

INGREDIENTS :

1. 2 Medium sized potatoes
2. 100 gms cottage cheese (Paneer)
3. 2 chillies, 1 inch ginger and 5 cloves garlic crushed together
4. Pinch of asafoetida(hing)
5. Pinch of turmeric(haldi)
6. 1/2 tsp Coriander and cumin powder
7. 1/2 tsp red chilli powder 
8. 1/2 tsp chaat masala (Optional)
9. Salt to taste .

METHOD: 

1. Boil, peel and mash the potatoes.
2. Grate the cottage cheese/paneer and add to the potatoes.
3. Add the remaining ingredients for the stuffing and mix well.
4. Adjust taste if required.
5. Take a small portion of the dough and roll in into a circle of around 3 inch diameter.
6. Take a little stuffing and place it in the centre of this.
7. Cover the stuffing with the dough on all sides so as to form a ball. Seal properly so that stuffing does not come out while rolling.
8. Add a little flour on the platform while rolling out the flatbread or parathas.
9. Using a rolling pin, gently roll out the parathas, Take care that the stuffing does not ooze out or that they do not stick to the platform. 
10. Gently lift the parathas and place them on a Hot tawa or girdle.
11. Keep the flame on low and roast the parathas on both sides till they are nice and golden brown on both sides.
12. Add a little butter on the sides while roasting to get a perfect golden colour 
 and excellent flavour.
13, Serve HOT with yogurt and Pickle of your choice. However can be enjoyed without any accompaniments as well.
