Spicy Potato accompaniment (Batata bhajee)

                                       

Boiled and diced potatoes, stir fried with onions and a few spices. Easy to prepare but very tasty. Goes well with almost anything . Yet another preparation using the humble and versatile potato.

INGREDIENTS :

4 med sized potatoes Boiled and chopped/diced
1 Big onion finely chopped 
2 inches of ginger
Few Curry leaves 
2 Tbsp Oil
1 tsp urad dal 
1 tsp mustard seeds
1/2 tsp Cumin seeds
a Pinch of Hing/asafoetida
1/2 tsp Turmeric powder
6 to 8 green chillies .
Juice of 1/2 lemon
1 tsp sugar
salt to taste 
Coriander leaves chopped for garnishing .

METHOD FOR THE FILLING :
1. Boil and dice/chop the Potatoes and keep aside.
2. In a kadai heat the oil .
3. Add the cumin seeds and mustard seeds.
4. When seeds crackle, add the hing and turmeric powder and stir a bit.
4. Make a paste of chillies and ginger (without adding any water)
5. Add urad daal and the chillies-ginger paste to the oil and saute a little. 
6. Add the curry leaves 
7. Now add the onion and Stir well.
8. Keep covered on a low flame till onion is translucent .
9. Now add diced potato, lemon juice ,sugar and salt . Mix well for a minute or two.
10 Your spicy batata bhajee is ready. 
11. Garnish with finely chopped coriander leaves.
12. Serve hot with Pooris, Roti or phulkas.
