Stir fry Okra (ladies finger)


Okra /ladies finger as it is popularly known due to its shape resembling the fingers of a lady or bhendi/bhindi as it is known in India . It is a popular vegetable, pretty much versatile and the method of preparation varies across regions. Presenting here a very simple preparation made with ingredients readily available in the kitchen. Goes very well with Roti/Phulka or rice.

INGREDIENTS :

Bhendi/Okra 300 gms
Crushed peanuts 1/2 bowl
Besan/gram flour 1/4 bowl
Oil  2 Tbsp
mustard seeds  1 tsp
Hing powder /Asafoetida  1/2 tsp
turmeric powder 1/2tsp
red chilli powder  1 to 2 tsp
Coriander powder (Dhania powder) 1 tsp
Cumin seed powder (Jeera powder) 1 tsp
Salt to taste
chaat masala to taste (Can be omitted. I add this just coz my daughter likes it)

METHOD:

1. Clean, wash the Bhendi.
2. Cut the bhendi/okra lengthwise into 4 quarters .
3. Heat the kadai/wok.
4. Add the Oil. Once the oil is hot, add the mustard seeds.
5. Let the seeds crackle. Then add the hing powder, turmeric powder and stir in a bit.
6. Add the sliced Bhendi to this and stir well. 
7. Keep stirring occasionally . Do not cover , else bhendi will turn sticky.
8. Once the Bhendi is cooked and crispy , add the rest of the ingredients one by one . 


                                

9. Mix well and stir for another 2 to 5 mins or till the besan gets cooked .
10. Your masala stir fry bhendi is ready. Serve hot with roti/phulka/rice and Enjoy .
