Mexican Taco Shells .



Whenever we think of Mexican food, the first name that comes to our mind is Tacos or Taco shells . A crispy taco shell made from maize flour, filled  with wholesome filling of rajma / red kidney beans , tangy salsa, lettuce and cheese is a delight to the palate. This dish if full of flavours, textures, health and nutrition . Tacos are very filling, they can be enjoyed as a meal by itself. Favourite with my family its a sure shot way to ensure your kids not only eat but also enjoy lettuce and beans too. Sharing my style of making them. Taco shells can also be filled with a Non-vegetarian filling like chicken or mince meat or anything else as you prefer. 

INGREDIENTS :

Taco shells 8 to 10 nos easily available in the market .
Red kidney beans (Rajma) 1 Bowl .
Onion 1 Med sized finely chopped 
Iceberg lettuce    1 small bunch broken into small shreds (Never cut lettuce it should always be torn by hand)
Salsa sauce  
Grated cheese (Pocessed or mozarella whichever you prefer)
Tomato ketchup   
Oil 1 tsp.
chilli flakes
Oregano
salt to taste 

METHOD :

1. Soak the Rajma seeds overnight in warm water .
2. Cook them in the pressure cooker (around 2 whistles and 20 mins on low flame).
3. Rajma should be well cooked but not overcooked .
4. In a pan , heat 1 tsp of oil .
5. Once oil is hot , add the chopped onion and saute till its translucent,
6. Now add the cooked rajma beans , a Bowl of tomato ketchup, chilli flakes, oregano and salt to taste.
7. Mix well and bring to a boil. 
8. Your rajma filling is now ready .

ASSEMBLING THE TACO SHELLS :

1. Spread the taco shells on a plate.
2. Add the iceberg lettuce shreds in each shell.
3. Now add the rajma filling in each shell.
4. Add a tsp of the Salsa in each shell.
5. Sprinkle grated cheese liberally over this in each of the shells . 
6. You can also replace grated cheese with  cheese sauce like i have done. 
7. Taco shells are ready to be served . Serve immediately after assembling else they will turn soggy.
