Spicy Appe (Dumplings made from fermented Rice and Pulses)



Tikhat or Spicy 'Appe', mainly a snack or breakfast dish but as its totally protein packed and full of nutrients can form a mini-meal too.

Fermented mixture of  Boiled rice(Ukda Tandul) , and chana dal (Bengal gram dal) and urad dal . Shallow fried in a special kitchen appliance called the 'Appe Patra ', these are power house of proteins. A favourite at my home . Are Enjoyed best when served HOT with Green chutney .

INGREDIENTS :

Boiled rice or Ukda Tandul 1 bowl
Urad dal. 1/2 bowl
Chana dal / Bengal gram dal 1/4 th bowl.
Ginger 2inch pc, 6 to 8 green chilles, small bunch coriander, salt to taste n Oil .

METHOD :

1.Soak rice, urad dal and chana dal separately for 6 to 8 hrs. 

2.Drain water grind all three to a paste and mix thoroughly.

3. Keep this mixture for fermentation overnight in a warm place

4. Just before making appe . Add salt to this mix. Add ginger chiili n coriander paste too. Mix well.




5. Heat the Appe/Appam patra (A special pan with depressions as shown in the pic. below) on the gas.


6. Add little oil in each compartment. Pour with a spoon some mixture in each. Keep covered with a lid .




7. Once the appe/appams are done ie. Golden brown from one side then gently turn them and cook from other side.

IMP : Keep gas flame on low, else the 'Appe' will turn brown on the outside but will not get cooked properly from inside.

8. Serve Hot with  Coconut chutney (Click for recipe) Enjoy.....
